Mustard Chicken with Broccoli and Silverbeet

TIP: Broccoli can be swapped with cauliflower if preferred.

Method

1.

To make dressing, whisk all ingredients in a jug. Season with salt and pepper. Set aside.

Cut broccoli vertically into 1cm-thick slices, reserving loose florets. Pull out pan and basket from a 7-litre air fryer. Spray basket with cooking oil. Place broccoli slices and florets in basket in a single layer. Drizzle with 1 tblsp oil. Season with salt and pepper.

Combine remaining oil with mustard and chicken in a bowl. Season. Toss to coat. Wrap 2 slices of bacon around each fillet. Secure with toothpicks.

Place chicken on broccoli. Spray with olive oil. Slide pan and basket back into air fryer. Set temperature to 200C. Set timer and cook for 10 minutes. Turn over chicken. Spray with olive oil. Slide pan and basket back into air fryer. Set timer and cook for a further 10 minutes until chicken is cooked. Remove toothpicks.

Meanwhile, heat an oiled, large frying pan over medium to high heat. Add silverbeet and garlic. Cook, stirring for about 3 minutes until wilted. Season.

6.

Serve chicken with broccoli, silverbeet, dressing and lemon.
